Hello Friends I made my first Keto recipe from my “Ultimate Keto cookbook” I mentioned in a few blogs ago I purchased it at Barnes & Noble. The cost of the book was $9.98. I made Jalapeno- Lime Chicken. I tweaked the recipe a bit only because I did not have limes and Jalapeno Jelly on hand. I substitute those two ingredients with Lemon and Blackberry preserve. Let me add I did have the Jalapeno’s though it was the pickled Jar Jalapeño, so I diced it up and mix it in the Blackberry preserve. It is a real simple recipe to make. The recipes calls for Chili powder, salt, pepper which most of us already have in our cupboards just your basic seasoning. The rest of the ingredients that it calls for was garlic (minced), Olive oil, Chicken thighs (8), lime juice and Jalapeño Jelly. We had it for lunch served along with Salad. I honestly thought It was going to be on the Spicer side being the recipe calls for Chili powder and Jalapeños but surprisingly it was not. I rate this dish a Ten in my book and My daughters loved it, not a sound of “this is spicy or I do not like the taste of it” from them. I received thumbs up on this meal from Leah and Cora! The cookbook has a variety of meals from Snack to Dinner, soups and salad. I am excited to test out more recipes from the cookbook.
Here is a step by step to make this Delicious Chicken.
Makes 8 servings.
8 chicken thighs (you can use other chicken parts such as breast, legs. please note cooking time may be different.)
3 tablespoon jalapeno jelly
1 tablespoon olive oil
1 tablespoon lime juice
1 clove of garlic, minced
1 teaspoon chili power
1/2 teaspoon black pepper
1/8 teaspoon salt
- Preheat oven to 400 degrees, Line a pan with foil; spray with nonstick cooking spray
- Arrange chicken in single layer. Bake for 15 minutes; drain off juice
- Combine jelly, oil, lime juice, garlic, chili powder, pepper and salt in a small bowl. Turn Chicken; brush with half of the jelly mixture. Bake 20 Minutes. Turn Chicken; brush with the remaining jelly mixture. Bake chicken 10-15 minutes or until cooked through (180 degrees).
This meal would be perfect to make on a busy weekday, easy to make and taste delicious have it with salad, or any type of vegetable.
